Our inspiration for these summer rolls came from our small deck garden, teeming with fragrant herbs like basil and Thai basil, Thai chiles, tomatoes, peppers, and even figs. This little green haven serves as a reminder of the beauty of fresh ingredients and the joy of cultivating our own produce. It’s a testament to the harmony of flavors that nature provides.
The Creamy Vegan Coconut Basil Sauce: A Symphony of Flavors
- 1/2 cup full-fat coconut milk
- 1/4 cup basil
- 1 tablespoon cashew butter
- 1 tablespoon lime juice
- 1/4 jalapeño (optional)
- 1/2 clove garlic
- 1/2 teaspoon fresh ginger
- 1/4 teaspoon sea salt
A Medley of Fresh Ingredients: The Filling
The heart of these summer rolls lies in the filling—a combination of ingredients inspired by Vietnamese spring rolls. Avocado, cucumber, tofu, radishes, and rice noodles come together harmoniously. But we wanted to add a touch of summer magic, so we introduced peaches! Their sweet, juicy goodness pairs exquisitely with basil, creating a symphony of flavors in every bite. If peaches are out of season, ripe mango slices or omitting the fruit altogether are viable options.
- 6 (28cm) spring roll rice wrappers
- 4 ounces cooked rice noodles
- 4 ounces extra-firm tofu, sliced into strips
- 1 ripe avocado, sliced
- 2 ripe peaches or 1 ripe mango, sliced
- 1/2 watermelon radish, very thinly sliced (optional)
- Fresh herbs: basil, Thai basil, and/or mint
- Pinches of sesame seeds
- Tamari and sriracha (optional for serving)
Instructions For Summer Rolls:
- Fill a shallow glass baking dish with about 1 inch of warm water.
- Submerge one rice paper wrapper in the warm water for about 7 seconds, or until it becomes soft and pliable.
- Lay the softened wrapper on a clean, damp kitchen towel.
- Place your desired fillings (cooked rice noodles, tofu strips, avocado slices, peaches or mango slices, watermelon radish slices if using, and fresh herbs) into the center of the wrapper.
- Fold the bottom of the wrapper over the filling, and gently tuck the filling under the wrapper.
- Fold the sides of the wrapper over the filling.
- Continue rolling and tucking the rice paper to form a summer roll.
- Repeat the process with the remaining rice paper wrappers and fillings.
- Serve the summer rolls with the prepared Basil Coconut Sauce for dipping.
- You can also serve them with tamari and sriracha on the side if desired.
